CIEH Level 2 Award in Food Safety

Rigorous enforcement of food hygiene legislation is important but it is not sufficient to prevent food poisoning.  The Chartered Institute of Environmental Health has designed its Food Safety course to give everyone an appreciation of the fundamentals of good food hygiene practice.  The course has been previously  known as the Basic or Foundation Food Hygiene Certificate.

Successful candidates will receive the Chartered Institute's certificate a few weeks after the course.

Course Content

  • FOOD POISONING
  • BACTERIOLOGY
  • PREVENTION OF CONTAMINATION
  • FOOD PRESERVATION
  • PERSONAL HYGIENE
  • PREMISES AND EQUIPMENT
  • PEST CONTROL
  • CLEANING AND DISINFECTION
  • LEGISLATION

The content covers the required topics but many of the modules are explored relevant to the environment of the course delegates.

The training is stimulating mix of individual and small group exercises finishing with a short multiple-choice paper.  Successful candidates will receive the Chartered Institutes certificate a few weeks after the course.

In addition to the standard short multiple-choice test, for equal opportunities access, the exam papers are available for delegates where English is a Second Language or as an Oral paper (For these to be available notification must be given 3 weeks in advance).  Catering, Manufacturing and Retail exam variants are now available for those working in those industries.

Although the topic is important, the event is lively with participants encouraged to ask questions during the session. Booklets and handouts are provided for reference purposes.
